Wash the spinach leaves thoroughly and blanch them in boiling water for 2-3 minutes. Drain and immediately transfer to ice water to stop the cooking process. Once cooled, blend the spinach to a smooth paste.

In a pan, heat the cooking oil over medium heat. Add cumin seeds and let them splutter. Then add finely chopped onions and sauté until they turn golden brown.

Stir in the ginger-garlic paste, chopped tomato, green chili, turmeric powder, red chili powder, and salt. Cook until the tomato softens.

Add the spinach puree to the pan and mix well. Add the paneer cubes and water. Stir to combine and let it simmer for about 5-7 minutes.
