    Prepare the Cheese Sticks

    Freeze the mozzarella cheese sticks for at least 1 hour to make them firm and easier to coat.

    Set Up Breading Station

    In one bowl, place the all-purpose flour. In a second bowl, beat the eggs. In a third bowl, combine the bread crumbs, Italian seasoning, garlic powder, salt, and black pepper.

    Bread the Cheese

    Remove the cheese sticks from the freezer. Dredge each stick in flour, dip it in the beaten eggs, then coat it in the bread crumb mixture. For extra crunch, repeat the egg and breadcrumb steps.

    Fry the Cheese Sticks

    In a deep skillet, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C). Fry the breaded mozzarella sticks in batches until golden brown, about 30 seconds to 1 minute. Remove and drain on paper towels.

    Sauté the Aromatics

    In a saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic. Sauté until the onion is translucent and fragrant, about 3-4 minutes.

    Stir in the diced plum tomatoes, dried basil, dried oregano, salt, black pepper, and sugar. Bring to a simmer.

    Reduce the heat to low and let the sauce simmer for 15-20 minutes, stirring occasionally, until it thickens slightly.

    Finish with Fresh Herbs

    Stir in the chopped fresh parsley just before serving. Adjust seasoning to taste.
