    In a large mixing bowl, combine the all-purpose flour, granulated sugar, and salt. Cut in the unsalted butter until the mixture resembles coarse crumbs.

    Gradually add the ice water, one tablespoon at a time, mixing until the dough just comes together. Be careful not to overmix.

    Shape the dough into a disk, wrap it in plastic wrap, and refrigerate for at least 30 minutes.

    In a medium bowl, combine the ricotta cheese, powdered sugar, vanilla extract, lemon zest, and chopped pistachios. Mix until smooth and well combined.

Assembly and Baking
