    Cook the Chorizo

    In a skillet over medium heat, cook the chorizo until browned and fully cooked, about 5-7 minutes. Remove from heat and set aside.

    Scramble the Eggs

    In a bowl, whisk the eggs together. In the same skillet, add a little oil if needed and pour in the eggs. Stir frequently until the eggs are fully cooked, about 3-4 minutes. Combine with the chorizo.

    Prepare the Vegetables

    Dice the poblano peppers and slice the green onions. In the skillet, sauté the poblano peppers in a little oil until tender, about 3-4 minutes. Add them to the egg and chorizo mixture.

    Assemble the Burrito

    On a large flour tortilla, layer the egg and chorizo mixture, sliced avocado, pepper jack cheese, pico de gallo, and a drizzle of creamy salsa verde. Sprinkle with cotija cheese and add a dollop of sour cream.

    Wrap it Up

    Fold in the sides of the tortilla and then roll it tightly from the bottom to the top. Repeat with the second tortilla.

    Cook the Burrito

    In the same skillet, place the burrito seam-side down and cook over medium heat until golden brown and crispy, about 2-3 minutes per side.

    Slice the burrito in half and serve with seasoned breakfast potatoes on the side.
