Prepare the Grits
In a medium saucepan, bring the chicken broth to a boil. Stir in the stone ground white grits and reduce heat to low. Cook, stirring occasionally, until the grits are thick and creamy, about 20-25 minutes. Season with salt and pepper to taste. Once done, remove from heat and set aside.

Cook the Sausage and Vegetables
In a large skillet, heat the olive oil over medium heat. Add the sliced andouille sausage and cook until browned, about 5 minutes. Add the diced poblano peppers and minced garlic, cooking until the peppers are tender, about 3-4 minutes.

Cook the Shrimp
Add the peeled and deveined shrimp to the skillet. Season with salt and black pepper. Cook until the shrimp are pink and opaque, about 3-5 minutes.

Serve
To serve, spoon a generous portion of the creamy grits onto each plate. Top with the sautéed shrimp, sausage, and poblano mixture, then drizzle with the smoked tomato gravy. Garnish with sliced green onions.
