Shaved prime rib, swiss, peppers, onions, comeback sauce

In a skillet over medium heat, sauté the diced onion and bell peppers until they are tender, about 5 minutes. Add the shaved prime rib and cook until heated through. Remove from heat and stir in the shredded swiss cheese until melted and well combined.

Prepare the Filling

Lay an eggroll wrapper on a clean surface with one corner pointing towards you. Place about 2 tablespoons of the prime rib mixture in the center of the wrapper. Fold the bottom corner over the filling, then fold in the sides and roll tightly to seal. Use a bit of water to help seal the edge.

Assemble the Eggrolls

In a deep skillet or fryer, heat the oil over medium-high heat until hot. Carefully add the eggrolls in batches, frying until golden brown and crispy, about 3-4 minutes on each side. Remove and drain on paper towels.

Fry the Eggrolls

Serve warm with comeback sauce on the side for dipping.
