Cook the Pasta
In a large pot of salted boiling water, cook the tagliatelle pasta according to package instructions until al dente. Drain and set aside.

Prepare the Sauce
In a large skillet, heat olive oil over medium heat. Add the diced onion and bell pepper, and sauté until softened, about 5 minutes.

Add Sausage and Shrimp
Add the sliced andouille sausage to the skillet and cook for another 3-4 minutes. Then, add the shrimp and cook until they turn pink, about 2-3 minutes.

Make the Cajun Cream Sauce
Pour in the heavy cream and add the Cajun seasoning. Stir to combine and let it simmer for 5 minutes until slightly thickened.

Combine with Pasta
Add the cooked tagliatelle and fresh spinach to the skillet, tossing to coat the pasta in the sauce. Season with salt and black pepper to taste.
