Method

Meatloaf

Prepare the Meatloaf Mix

In a large bowl, combine the ground beef, chopped onion, minced garlic, breadcrumbs, egg, milk, Worcestershire sauce, salt, and black pepper. Mix until just combined.

Shape and Bake

Transfer the meat mixture to a loaf pan and shape it into a loaf. Spread ketchup on top. Bake at 350°F (175°C) for 1 hour or until cooked through.

Roasted Garlic Mashed Potatoes

Cook the Potatoes

Boil the cubed potatoes in salted water until tender, about 15-20 minutes. Drain and return to the pot.

Mash and Mix

Add butter, roasted garlic (squeeze out the cloves), milk, salt, and pepper to the potatoes. Mash until creamy and smooth.

Mushroom Gravy

Sauté the Mushrooms

In a skillet, melt butter over medium heat. Add sliced mushrooms and cook until browned.

Make the Gravy

Stir in flour and cook for 1 minute. Gradually add beef broth and soy sauce, stirring continuously until thickened. Season with black pepper.

Prepare the Veggies

Preheat the oven to 400°F (200°C). Toss mixed vegetables with pesto, melted butter, minced garlic, salt, and pepper.

Roast

Spread the vegetables on a baking sheet and roast for 20-25 minutes or until tender and slightly caramelized.
