Cake and Toppings

Method

Preparation Steps

  1. 1

    Prepare the Cake

Preheat the oven to 350°F (175°C). Grease and flour a 9x13 inch baking pan.

  2. 2

    Cream the Butter and Sugar

In a large mixing bowl, cream together the unsalted butter and granulated sugar until light and fluffy.

  3. 3

    Add Eggs and Vanilla

Beat in the eggs one at a time, then stir in the vanilla extract.

  4. 4

    Combine Dry Ingredients

In a separate bowl, whisk together the all-purpose flour, baking powder, and salt.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the wet mixture, mixing until just combined.

  6. 6

    Bake the Cake

Pour the batter into the prepared baking pan and smooth the top. Bake in the preheated oven for 30-35 minutes, or until a toothpick inserted into the center comes out clean.

  7. 7

    Make the Whipped Cream

While the cake cools, whip the heavy cream in a bowl until soft peaks form. Gradually add the powdered sugar and continue whipping until stiff peaks form.

  8. 8

    Assemble the Dish

Once the cake has cooled, cut it into squares. Top each square with a dollop of whipped cream, a handful of fresh raspberries, and a sprinkle of toasted almonds.

  9. 9

    Serve

Dust with additional powdered sugar if desired and serve immediately.
