    Preheat your oven to 350°F (175°C). In a large mixing bowl, combine the ground beef, breadcrumbs, eggs, chopped onion, minced garlic, chopped cilantro, chili powder, cumin, salt, and pepper. Mix until well combined.

    Transfer the meat mixture into a loaf pan or shape it into a loaf on a baking sheet. Bake in the preheated oven for 60-75 minutes, or until the internal temperature reaches 160°F (70°C).

    Prepare the Breakfast Potatoes

    While the meatloaf is baking, prepare the seasoned breakfast potatoes according to your preferred recipe or package instructions.

    Prepare Sunny-Side Up Eggs

    In a skillet, cook the sunny-side up eggs to your liking, seasoning with a pinch of salt and pepper.

    Assemble the Dish

    Once the meatloaf is done, remove it from the oven and let it rest for 10 minutes. Serve slices of meatloaf topped with salsa roja, verde gravy, shredded pepper jack cheese, pico de gallo, and crumbled cotija cheese. Add a side of seasoned breakfast potatoes and sunny-side up eggs. Drizzle with hot sauce to taste.
