Prepare the Filling
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the diced bell pepper and sauté until soft, about 3-4 minutes. Add the shredded chicken and mix well, cooking for another 2-3 minutes until heated through.

Assemble the Quesadilla
Lay a tortilla flat in the skillet over medium heat. Sprinkle 1/2 cup of cheddar cheese on half of the tortilla. Add a portion of the chicken and bell pepper mixture on top of the cheese, then fold the tortilla over to cover the filling.

Cook the Quesadilla
Cook for about 3-4 minutes on one side until golden brown. Flip carefully and cook for another 3-4 minutes on the other side until the cheese is melted and the tortilla is crispy.

Serve
Remove the quesadilla from the skillet and let it cool for a minute. Cut into wedges and serve with sour cream and salsa on the side.
