    Marinate the Chicken

    In a bowl, combine chopped jalapeños, buttermilk, salt, black pepper, garlic powder, and onion powder. Add chicken pieces, ensuring they are well coated. Cover and refrigerate for 4 days.

    Prepare the Breading

    In a separate bowl, mix together flour, cornstarch, paprika, cayenne pepper, and salt.

    Heat the Oil

    In a deep fryer or large pot, heat oil to 350°F (175°C).

    Bread the Chicken

    Remove chicken from the marinade and allow excess liquid to drip off. Dredge each piece in the breading mixture, ensuring a good coating.

    Fry the Chicken

    Carefully place breaded chicken pieces into the hot oil. Fry in batches for about 15-18 minutes or until golden brown and cooked through, reaching an internal temperature of 165°F (75°C).

    Drain and Serve

    Remove fried chicken from oil and drain on paper towels. Serve hot.
