Preparation Steps

  1. 1

    Prepare the Tartar Sauce

In a bowl, combine mayonnaise, lemon juice, capers, and dill. Mix well and set aside.

  2. 2

    Make the Slaw

In another bowl, mix shredded cabbage and carrots with a pinch of salt. Add a bit of the tartar sauce to moisten. Set aside.

  3. 3

    Prepare the Batter

In a mixing bowl, combine flour, cornstarch, baking powder, salt, and black pepper. Slowly whisk in the Red Door Amber Ale until smooth.

  4. 4

    Prepare the Fries

Cut potatoes into fries. Soak in cold water for 30 minutes, then drain and pat dry.

  5. 5

    Heat the Oil

In a large pot or deep fryer, heat vegetable oil to 350°F (175°C).

  6. 6

    Fry the Fries

Fry the potatoes in batches until golden and crispy, about 5-7 minutes. Remove with a slotted spoon and drain on paper towels. Season with salt.

  7. 7

    Fry the Cod

Dip each cod fillet in the batter, allowing excess to drip off. Carefully place in the hot oil and fry until golden brown, about 4-5 minutes. Remove and drain on paper towels.

  8. 8

    Serve

Serve the fish hot with fries, slaw, and house tartar sauce on the side.
