Biscuits and Gravy
Method
Instructions
- 1
Make the Biscuits
Preheat the oven to 425°F (220°C). In a large bowl, mix together the flour, baking powder, and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the milk until just combined. Turn the dough onto a floured surface and knead gently. Roll out to about 1 inch thick and cut into rounds. Place on a baking sheet and bake for 15-20 minutes until golden brown.
- 2
Prepare the Gravy
In a skillet over medium heat, cook the sawmill sausage until browned. Remove the sausage, leaving the drippings in the skillet. Add flour to the drippings to create a roux, stirring for about 1 minute. Gradually whisk in the milk, and cook until thickened. Stir in the cooked sausage and season with black pepper.
- 3
Cook the Bacon
In a separate skillet, cook the applewood thick-cut bacon over medium heat until crispy. Drain on paper towels.
- 4
Scramble the Eggs
In a bowl, whisk the eggs and cook them in a non-stick skillet over medium heat, stirring gently until just set.
- 5
Assemble the Dish
Serve the biscuits topped with the sausage gravy, alongside scrambled eggs and crispy bacon.
