Prepare the Rice

    Cook the Rice

    In a medium saucepan, combine 1 cup of rice and 2 cups of water. Bring to a boil over medium-high heat. Once boiling, reduce heat to low, cover, and simmer for 18-20 minutes or until the water is absorbed and the rice is tender. Remove from heat and let it sit covered for 5 minutes.

Prepare the Vegetables

    Chop the Vegetables

    While the rice is cooking, wash and chop the bell peppers, broccoli, carrots, snap peas, and zucchini into bite-sized pieces.

Cook the Stir-Fry

    Sauté the Vegetables

    In a large skillet or wok, heat 1 tablespoon of sesame oil over medium-high heat. Add the chopped vegetables and stir-fry for about 5-7 minutes until they are tender-crisp.

    Add the Sauce

    Add minced garlic and ginger to the skillet and stir for 1 minute until fragrant. Then, pour in 3 tablespoons of soy sauce and season with black pepper to taste. Stir well to combine and cook for an additional 2-3 minutes.

Serve

    Plate the Dish

    Fluff the cooked rice with a fork and divide it among plates. Top with the vegetable stir-fry and serve hot.
