Method

Cooking the Tortellini

  1. 1

    Boil the Tortellini

In a large pot, bring salted water to a boil. Add the ricotta cheese tortellini and cook according to package instructions, usually about 3-5 minutes until they float to the surface. Drain and set aside.

Preparing the Sauce

  1. 2

    Sauté the Aromatics

In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, but not browned.

  2. 3

    Add White Wine

Pour in the white wine, scraping any bits off the bottom of the skillet. Let it simmer for about 2-3 minutes until reduced slightly.

  3. 4

    Stir in Heavy Cream

Lower the heat and add the heavy cream to the skillet. Stir well to combine and let it simmer for another 3-4 minutes.

  4. 5

    Season the Sauce

Add salt, black pepper, and chopped fresh basil to the sauce. Stir well and let it cook for an additional 2 minutes.

Combining Ingredients

  1. 6

    Add Fruits and Tortellini

Gently fold in the diced pineapple, sliced banana, halved grapes, and cooked tortellini into the sauce. Stir delicately to combine, ensuring the tortellini and fruits are well coated in the creamy sauce.

  2. 7

    Finish with Green Onions

Sprinkle the chopped green onions over the top and give a gentle stir to incorporate.

Serving the Dish

  1. 8

    Serve Hot

Serve the Tortellini Jamaica warm, garnished with additional fresh basil if desired.
