Method

Cooking the Pasta

    Boil the Pasta

    In a large pot, bring salted water to a boil. Add the tri-colored rotini and cook according to package instructions until al dente, about 8-10 minutes. Drain and set aside.

Cooking the Shrimp

    Sauté the Shrimp

    In a large skillet over medium heat, add a drizzle of olive oil. Once hot, add the minced garlic and sauté until fragrant, about 30 seconds. Add the shrimp and cook until pink and opaque, about 3-4 minutes. Stir in the spicy jerk seasoning to coat the shrimp evenly.

Combining Ingredients

    Mix the Sauce

    Add the diced tomatoes and red wine tomato sauce to the skillet with the shrimp. Stir to combine and let simmer for 3-5 minutes to allow the flavors to meld.

    Combine with Pasta

    Add the cooked tri-colored rotini to the skillet, tossing gently to combine with the shrimp and sauce. Stir in the chopped basil and green onion.

    Finish with Lime

    Drizzle with fresh lime juice and give everything a final toss to ensure the flavors are well incorporated.
