Method

Cake Preparation

  1. 1

    Preheat the Oven

Preheat your oven to 350°F (175°C).

  2. 2

    Mix Dry Ingredients

In a mixing bowl, whisk together the all-purpose flour, baking powder, and salt.

  3. 3

    Cream Butter and Sugar

In a separate large bowl, cream the softened butter and granulated sugar until light and fluffy.

  4. 4

    Add Eggs and Vanilla

Add the eggs one at a time, mixing well after each addition, then stir in the vanilla extract.

  5. 5

    Combine Mixtures

Gradually add the dry ingredients to the butter mixture, alternating with the milk and dark rum, starting and ending with the flour mixture. Mix until just combined.

  6. 6

    Bake the Cake

Pour the batter into a greased bundt pan and smooth the top. Bake for 50-60 minutes, or until a toothpick inserted into the center comes out clean.

Rum Soak Preparation

  1. 7

    Prepare Rum Soak

In a small saucepan, combine 0.75 cups of dark rum, 0.5 cups of granulated sugar, and 0.25 cups of water. Heat over medium heat, stirring until the sugar dissolves. Remove from heat and let cool.

  2. 8

    Soak the Cake

Once the cake is done baking, allow it to cool in the pan for about 10 minutes. Then, carefully invert it onto a plate. While still warm, poke holes all over the top of the cake using a skewer or toothpick, and pour the rum soak evenly over the top. Let it absorb for at least 30 minutes.

Serving

  1. 9

    Serve the Cake

Slice the rum cake and serve it with a scoop of vanilla ice cream on the side.
