Cooking the Pasta

Boil Water
In a large pot, bring 4 liters of water to a rolling boil.

Add Salt
Once the water is boiling, add 1 tablespoon of salt to the water.

Cook Pasta
Add 200 grams of spaghetti to the boiling water and cook according to package instructions, usually about 8-10 minutes or until al dente.

Drain Pasta
Once cooked, drain the spaghetti in a colander and set aside, reserving a small cup of pasta water.
Making the Marinara Sauce

Heat Olive Oil
In a large skillet, heat 2 tablespoons of olive oil over medium heat.

Sauté Garlic
Add 4 minced garlic cloves to the skillet and sauté for about 1 minute until fragrant, being careful not to burn them.

Add Tomatoes
Pour in the 800 grams of canned whole tomatoes, breaking them up with a spoon.

Season Sauce
Stir in 1 teaspoon of dried oregano, 1 teaspoon of dried basil, 1 teaspoon of sugar, 1 teaspoon of salt, and 1 teaspoon of black pepper. Let the sauce simmer for about 15-20 minutes.

Finish with Fresh Basil
Once the sauce has thickened, stir in 2 tablespoons of chopped fresh basil and remove from heat.
Combining

Combine Pasta and Sauce
Add the drained spaghetti to the marinara sauce and toss well to combine. If the sauce is too thick, add a little reserved pasta water to adjust the consistency.

Serve hot, garnished with extra fresh basil if desired.
