    Make the Marinade

    In a medium bowl, combine the jerk seasoning, olive oil, soy sauce, lime juice, minced garlic, grated ginger, chopped Scotch bonnet pepper, salt, and black pepper. Mix well until all ingredients are thoroughly combined.

    Marinate the Chicken

    Place the chicken thighs in a large resealable plastic bag or a shallow dish. Pour the marinade over the chicken, ensuring it is well coated. Seal the bag or cover the dish and refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Grilling

    Preheat the Grill

    Preheat your grill to medium-high heat (about 375°F to 400°F or 190°C to 200°C). Make sure the grill grates are clean and lightly oiled to prevent sticking.

    Grill the Chicken

    Remove the chicken from the marinade, allowing any excess to drip off. Place the chicken thighs skin-side down on the grill. Grill for about 6-7 minutes, then flip and continue grilling for another 6-7 minutes, or until the internal temperature reaches 165°F (75°C) and the chicken is cooked through.

    Rest the Chicken

    Once cooked, remove the chicken from the grill and let it rest for about 5 minutes before serving. This allows the juices to redistribute and keeps the chicken moist.
