    Make the Dough

    In a large mixing bowl, combine the flour and salt. Make a well in the center and crack the eggs into it. Using a fork, gradually incorporate the flour into the eggs until a dough forms. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let it rest for 30 minutes.

    Prepare the Filling

    In a medium bowl, mix together the ricotta cheese, chopped basil, minced garlic, diced tomatoes, and chopped green onions. Stir until well combined. Set aside.

Marinara Sauce

    Make the Marinara Sauce

    In a saucepan, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant. Pour in the crushed tomatoes and add dried oregano, salt, and black pepper. Simmer for 20 minutes, then stir in fresh basil at the end.

Assemble and Cook Ravioli

    Roll and Cut Dough

    After the dough has rested, roll it out on a floured surface until thin. Cut into squares, approximately 3 inches by 3 inches.

    Fill and Seal Ravioli

    Place a teaspoon of filling in the center of each square. Fold over the dough to form a triangle and press the edges to seal. Repeat until all dough and filling are used.

    Cook Ravioli

    Bring a large pot of salted water to a boil. Add the ravioli and cook for 4-5 minutes or until they float to the top. Remove with a slotted spoon.

    Combine with Protein and Sauce

    In a large serving bowl, combine the cooked ravioli with your choice of protein (spicy sausage, diced clams, or jerk chicken) and pour the marinara sauce over. Toss gently to combine.
