Mousse Preparation

Melt the Chocolate
Chop the dark chocolate into small pieces and place it in a heatproof bowl. Melt it using a double boiler method or microwave in short bursts, stirring until smooth. Set aside to cool slightly.

Whisk the Egg Yolks
In a separate bowl, whisk together the egg yolks and granulated sugar until the mixture is pale and creamy. Add the vanilla extract and a pinch of salt, and mix until combined.

Combine Chocolate and Egg Mixture
Gradually fold the melted chocolate into the egg yolk mixture until fully incorporated and smooth.

Beat Egg Whites
In a clean bowl, beat the egg whites using an electric mixer until soft peaks form. Gently fold the beaten egg whites into the chocolate mixture in three additions, being careful not to deflate the air from the egg whites.

Whip the Cream
In another bowl, whip the 200 ml of whipping cream until soft peaks form. Gently fold the whipped cream into the chocolate mixture until well combined.

Chill the Mousse
Spoon the mousse into serving dishes or glasses and refrigerate for at least 2 hours or until set.

Prepare the Whipped Topping
In a mixing bowl, beat the 100 ml of whipping cream with the powdered sugar until soft peaks form.

Serve the Mousse
Once the mousse is set, top each serving with a dollop of whipped cream and sprinkle with chocolate shavings for garnish.
