Method

Preparing the Chicken

    Marinate the Chicken

    In a bowl, combine the jerk seasoning and olive oil. Add the chicken breasts and coat them thoroughly. Let marinate for at least 30 minutes.

    Cook the Chicken

    Heat a grill or a skillet over medium-high heat. Cook the marinated chicken for about 6-7 minutes on each side, or until fully cooked and the internal temperature reaches 165°F (75°C). Remove from heat and let it rest before slicing.

Preparing the Salad Base

    Prepare the Lettuce

    Wash and dry the romaine and red leaf lettuce. Tear them into bite-sized pieces and place them in a large salad bowl.

    Add Fresh Veggies

    Halve the cherry tomatoes, dice the cucumber and red bell pepper. Add all the fresh veggies to the bowl with the lettuce.

    Add Pineapple

    Add the pineapple chunks to the salad bowl and toss gently to combine.

Making the Citrus Spice Dressing

    Combine Ingredients

    In a small bowl, whisk together the olive oil, lime juice, orange juice, honey, minced garlic, salt, and black pepper until well combined.

Assembling the Salad

    Slice the Chicken

    Slice the grilled jerk chicken into strips.

    Combine Everything

    Add the sliced chicken on top of the prepared salad base. Drizzle the Citrus Spice Dressing over the salad and toss gently to coat.
