Prepare the Chicken
Cut the chicken breast into bite-sized pieces. Season with salt and pepper.
Bread the Chicken
Set up a breading station with three bowls: one with flour, one with beaten egg, and one with panko breadcrumbs. Dredge each piece of chicken in flour, dip in egg, and coat with panko.
Fry the Chicken
Heat vegetable oil in a large skillet over medium-high heat. Fry the breaded chicken until golden brown and cooked through, about 4-5 minutes per side. Remove and drain on paper towels.
Make the Sauce
In a separate saucepan, combine orange juice, soy sauce, sugar, minced garlic, and grated ginger. Bring to a boil.
Thicken the Sauce
In a small bowl, mix cornstarch and water to create a slurry. Stir into the boiling sauce and cook until thickened, about 2-3 minutes.
Combine Chicken and Sauce
Add the fried chicken to the sauce, tossing to coat well.
Serve
Serve the orange chicken over steamed white rice.
