Prepare the Ice Cream

Scoop out the ice cream and let it soften slightly at room temperature for about 10 minutes. Then shape the ice cream into balls (about 1-2 tablespoons each) and return them to the freezer to harden while you prepare the mochi.

Make the Mochi Dough

In a microwave-safe bowl, mix the sweet rice flour and sugar. Gradually add the water and stir until smooth. Cover the bowl with plastic wrap and microwave on high for 1 minute. Stir the mixture, cover again, and microwave for another minute. Stir once more, then microwave for an additional 30 seconds. The mixture should be thick and slightly translucent.

Dust and Roll

Dust a clean surface with cornstarch. Carefully transfer the mochi dough onto the surface. Dust your hands with cornstarch and divide the dough into small pieces (about 2 inches in diameter). Flatten each piece into a circle large enough to wrap around the ice cream ball.

Assemble the Mochi Ice Cream

Take an ice cream ball from the freezer and place it in the center of a flattened mochi piece. Gently wrap the mochi around the ice cream, pinching the edges to seal. Repeat with the remaining ice cream and mochi dough.

Freeze and Serve

Once assembled, place the mochi ice cream balls back in the freezer for at least 1 hour to set. Serve frozen and enjoy!
