Prepare the Soy Chashu

Marinate the Tofu
In a bowl, mix together soy sauce, mirin, and water. Add the sliced tofu, ginger, garlic, and green onions. Let it marinate for at least 30 minutes or overnight for more flavor.

Cook the Tofu
Transfer the marinated tofu and the marinade into a saucepan. Bring to a simmer over medium heat. Cook for about 20 minutes, flipping the tofu halfway through until it absorbs the flavor and becomes tender.
Prepare the Rice

Cook the Rice
Rinse the short-grain rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker or pot. Cook according to the rice cooker's instructions or bring to a boil, cover, and simmer on low for about 20 minutes.
Assemble the Dish

Serve the Donburi
Scoop the cooked rice into bowls. Top with the soy chashu tofu, and drizzle some of the remaining marinade over the top. Garnish with sliced nori, sesame seeds, and pickled ginger as desired.
