Ingredients: 2 cups Japanese short-grain rice; 2.5 cups Water; 100 grams Mentaiko (spicy cod roe); 1 tablespoon Butter; 2 tablespoons Nori (seaweed), shredded; 2 tablespoons Chopped green onions; 1 tablespoon Soy sauce; 1 tablespoon Sesame seeds, toasted

Rinse the Japanese short-grain rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

Cooking the Rice

While the rice is cooking, take the mentaiko and remove the roe from the sac. Set aside.

Prepare the Mentaiko

Once the rice is cooked, fluff it with a fork and add the butter. Stir until melted. Then, gently fold in the mentaiko, soy sauce, and half of the chopped green onions.
