1. Cooking the Rice

Rinse the Japanese short-grain rice under cold water until the water runs clear. Combine the rinsed rice and water in a rice cooker and cook according to the manufacturer's instructions.

2. Prepare the Mentaiko

While the rice is cooking, take the mentaiko and remove the roe from the sac. Set aside.

3. Mix Ingredients

Once the rice is cooked, fluff it with a fork and add the butter. Stir until melted. Then, gently fold in the mentaiko, soy sauce, and half of the chopped green onions.

4. Serve

Serve the mentaiko rice in bowls, garnished with shredded nori, the remaining chopped green onions, and toasted sesame seeds.
