Broth Preparation

1. Prepare the Broth

In a large pot, combine the water, dried shiitake mushrooms, kombu, garlic cloves, and ginger. Bring to a boil over high heat.

2. Simmer

Once boiling, reduce heat to low and let it simmer for at least 30 minutes. Remove the kombu after 15 minutes to prevent bitterness.

3. Add Flavorings

Stir in the soy sauce, miso paste, and sesame oil. Mix well until the miso is fully dissolved.

4. Strain the Broth

Strain the broth through a fine mesh sieve to remove the solids. Return the liquid to the pot.

5. Add Tofu and Green Onions

Add the cubed tofu and chopped green onions to the strained broth. Let it heat for another 5 minutes.
