Prepare the Filling
In a large mixing bowl, combine the shiitake mushrooms, cabbage, grated carrot, green onions, minced garlic, grated ginger, soy sauce, sesame oil, salt, and black pepper. Mix well until all ingredients are fully combined.

Form the Gyoza
Take a gyoza wrapper and place about 1 tablespoon of the filling in the center. Moisten the edges of the wrapper with water, fold it in half, and pinch the edges to seal. You can create pleats along the edge for a decorative touch. Repeat with the remaining wrappers and filling.

Pan-fry the Gyoza
Heat a non-stick skillet over medium heat and add 1 tablespoon of oil. Once hot, place the gyoza in the skillet, ensuring they are not touching. Cook for about 2-3 minutes or until the bottoms are golden brown.

Steam the Gyoza
Add 1/4 cup of water to the skillet and cover immediately with a lid. Allow the gyoza to steam for about 5-7 minutes until the water has evaporated and the gyoza are fully cooked.

Serve
Remove the lid and let any remaining water evaporate for a minute. Serve the gyoza warm with soy sauce or your favorite dipping sauce.
