Prepare the Broth

    Making the Broth

    In a large pot, combine water, dried shiitake mushrooms, and kombu. Bring to a boil, then reduce heat and simmer for 30 minutes.

    Adding Flavor

    Remove the kombu and shiitake mushrooms. Stir in soy sauce, miso paste, garlic, and ginger. Simmer for another 15 minutes.

Prepare the Tofu

    Fry the Tofu

    Toss the pressed and sliced tofu in cornstarch until evenly coated. Heat vegetable oil in a skillet over medium heat. Fry the tofu until golden brown on all sides, about 10 minutes. Remove and set aside.

Cook the Noodles

    Boil the Ramen

    In a separate pot, bring water to a boil and cook the ramen noodles according to package instructions. Drain and set aside.

Assemble the Ramen

    Combine and Serve

    In serving bowls, add the cooked ramen noodles, ladle the vegan broth over the noodles, and top with fried tofu, nori strips, bean sprouts, and toasted sesame seeds. Garnish with chopped green onions and serve hot.
