Braised Pork Belly
Preparation
1. Prepare the Pork Belly
Cut the pork belly into thick slices, about 1 inch each.
2. Sear the Pork Belly
In a large, heavy-bottomed pot, heat a bit of oil over medium-high heat. Sear the pork belly slices on both sides until browned. Remove and set aside.
3. Create the Braising Liquid
In the same pot, add soy sauce, mirin, sake, brown sugar, ginger, garlic, and water. Stir to combine and bring to a simmer.
4. Braise the Pork Belly
Return the seared pork belly to the pot, ensuring they are submerged in the liquid. Cover and cook on low heat for about 2 to 3 hours, or until the meat is tender.
5. Cool and Slice
Once cooked, remove the pork belly from the pot and let it cool. Once cooled, slice into thin pieces for serving.
6. Serve
Serve the extra chashu slices as a topping for ramen or enjoy them on their own. Garnish with chopped green onions.
