Preparation and Cooking

    Preparing the Pork

    Roll the pork belly tightly and tie it with kitchen twine. This helps it maintain a cylindrical shape during cooking.

    Marinating the Pork

    In a bowl, combine soy sauce, mirin, sake, sugar, garlic, and ginger. Stir until the sugar dissolves. Place the rolled pork belly in the marinade, cover, and refrigerate for at least 3 hours, preferably overnight.

    Cooking the Pork

    Preheat your oven to 150°C (300°F). Place the marinated pork belly in a baking dish with the marinade. Cover with foil and bake for 2-3 hours, until tender. Turn the pork every hour for even cooking.

    Searing the Pork

    Remove the pork from the oven and sear it in a hot skillet for a few minutes on each side until it is caramelized and crispy.

    Preparing the Rice

    While the pork is cooking, prepare the rice according to package instructions.

    Slice the chashu pork and serve it over a bowl of rice. Drizzle some of the marinade over the top and garnish with chopped green onions.
