    Prepare the Ingredients

    Slice the pork tenderloin into thin strips. Julienne the carrot and bell pepper. Chop the broccoli into small florets. Mince the garlic and grate the ginger. Slice the green onions.

    Cook the Pork

    In a large pan or wok, heat 1 tablespoon of vegetable oil over medium-high heat. Add the sliced pork and cook until browned and cooked through, about 5-7 minutes. Remove from the pan and set aside.

    Stir-fry the Vegetables

    In the same pan, add another tablespoon of vegetable oil. Add the garlic and ginger, sauté for about 30 seconds until fragrant. Then, add the carrots, bell pepper, and broccoli. Stir-fry for 3-4 minutes until the vegetables are tender yet crisp.

    Combine Everything

    Add the cooked udon noodles and pork back to the pan with the vegetables. Pour in the soy sauce and mirin. Toss everything together and cook for an additional 2-3 minutes until heated through.

    Garnish and Serve

    Remove from heat, sprinkle with sesame seeds and sliced green onions. Serve hot.
