Cook the Ramen Noodles
In a pot of boiling water, cook the ramen noodles according to package instructions until al dente. Drain and set aside.

Prepare the Ground Pork
In a large skillet, heat sesame oil over medium heat. Add ground pork and cook until browned, breaking it apart with a spatula. Add soy sauce and stir well.

Sauté the Vegetables
Add black fungus and bean sprouts to the skillet with the ground pork. Cook for another 2-3 minutes until the vegetables are tender.

Assemble the Ramen
In serving bowls, divide the cooked ramen noodles. Pour the hot broth over the noodles, then top with the pork and vegetable mixture. Garnish with chopped scallions.
