Char Siu Preparation

Marinating the Pork
In a large bowl, combine soy sauce, honey, Chinese five-spice powder, minced garlic, rice wine, sesame oil, and black pepper. If using, add the red food coloring for that signature look. Mix well to create a marinade.

Adding the Meat
Cut the pork shoulder into long strips (about 2 inches thick) and add to the marinade. Make sure the pork is well-coated. Cover the bowl with plastic wrap and refrigerate for at least 4 hours, preferably overnight.

Prepping for Cooking
Preheat your oven to 375°F (190°C). Line a baking tray with aluminum foil and place a rack on top.

Baking the Char Siu
Remove the pork from the marinade, allowing excess marinade to drip off. Place the pork strips on the rack. Reserve the marinade for basting. Bake in the preheated oven for about 25 minutes.

Basting and Finishing
After 25 minutes, baste the pork with the reserved marinade and turn the strips over. Bake for another 25 minutes, basting again halfway through, until the pork is caramelized and cooked through.

Once cooked, remove the pork from the oven and let it rest for 10 minutes before slicing into pieces. Serve warm.
