    Prepare the Roux

    In a large pot, heat the vegetable oil over medium heat. Whisk in the flour and cook, stirring constantly, until the mixture turns a dark brown color (about 15-20 minutes).

    Cook the Vegetables

    Add the diced onion, green bell pepper, and celery to the pot. Cook for 5-7 minutes until softened. Stir in the minced garlic and cook for another minute.

    Add the Liquids

    Pour in the chicken broth and add the canned diced tomatoes, bay leaves, thyme, cayenne pepper, salt, and black pepper. Bring to a simmer.

    Add Meats

    Stir in the shredded smoked duck and sliced andouille sausage. Let the gumbo simmer for at least 30 minutes to blend the flavors.

For the Wild Rice Pilaf

    Cook the Wild Rice

    In a saucepan, melt the butter over medium heat. Add the finely chopped onion and sauté until translucent. Stir in the wild rice and cook for another minute.

    Simmer

    Add water or chicken broth, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for about 45-50 minutes or until the rice is tender and the liquid is absorbed.
