Prepare the Roux
In a large pot, heat the vegetable oil over medium heat. Whisk in the flour and cook, stirring constantly, until the mixture turns a dark brown color (about 15-20 minutes).

Add the Liquids
Pour in the chicken broth and add the canned diced tomatoes, bay leaves, thyme, cayenne pepper, salt, and black pepper. Bring to a simmer.

Add Meats
Stir in the shredded smoked duck and sliced andouille sausage. Let the gumbo simmer for at least 30 minutes to blend the flavors.

Simmer
Add water or chicken broth, salt, and pepper. Bring to a boil, then reduce heat, cover, and simmer for about 45-50 minutes or until the rice is tender and the liquid is absorbed.
