For the Quail Bites

Prepare the Quail

Preheat vegetable oil in a deep fryer or large pot to 350°F (175°C). In a bowl, combine flour, cornmeal, salt, black pepper, and cayenne pepper. In another bowl, whisk together eggs and milk. Dip quail pieces first in the egg mixture, then coat in the flour mixture.

Fry the Quail

Carefully place coated quail pieces into the hot oil and fry for about 5-7 minutes or until golden brown and crispy. Remove and drain on paper towels.

For the White Cheddar Grits

Cook the Grits

In a saucepan, bring water and salt to a boil. Stir in grits, reduce heat to low, and cook for about 20-25 minutes, stirring occasionally until thickened. Remove from heat and stir in butter and white cheddar cheese until melted and creamy.

For the Bourbon Bacon Gravy

Cook the Bacon

In a skillet over medium heat, cook chopped bacon until crispy. Remove bacon and set aside, leaving the drippings in the skillet.

Make the Gravy

Add flour to the drippings and whisk for about 2 minutes. Gradually add milk and bourbon, stirring continuously until thickened. Season with salt and black pepper. Stir the bacon back into the gravy.
