Pancakes

    Make the batter

    In a large bowl, whisk together the flour, baking powder, sugar, and salt. In another bowl, mix the milk, eggs, melted butter, and vanilla. Combine wet and dry ingredients and stir until just combined.

    Heat a non-stick skillet over medium heat. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on top, then flip and cook until golden brown. Repeat with remaining batter.

    In a skillet over medium heat, cook the bacon strips until crispy. Drain on paper towels.

    In a bowl, combine mixed berries and sliced banana. Drizzle with honey and toss gently. Add mint leaves for garnish.
