    Prepare the Base

    In a large pot or Dutch oven, heat the olive oil over medium heat. Add the chopped onion, green bell pepper, and celery. Sauté until the vegetables are soft, about 5-7 minutes.

    Add Garlic and Sausage

    Stir in the minced garlic and sliced sausage, cooking for an additional 2-3 minutes until fragrant.

    Combine Remaining Ingredients

    Add the diced tomatoes (with juice), chicken broth, rice, cajun seasoning, bay leaves, salt, and black pepper. Stir well to combine.

    Cook the Jambalaya

    Bring the mixture to a boil. Reduce heat to low, cover, and simmer for 20 minutes.

    Add Seafood

    After 20 minutes, add the shrimp and crawfish tails. Stir gently and cover again, cooking for another 5-7 minutes or until the shrimp are pink and cooked through.

    Final Touches

    Remove bay leaves. Adjust seasoning with salt and black pepper as needed. Garnish with sliced green onions before serving.
