Carrot Cake Directions

1. Preheat the Oven

Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.

2. Mix Dry Ingredients

In a large bowl, whisk together the flour, granulated sugar, brown sugar, baking powder, baking soda, cinnamon, and salt.

3. Combine Wet Ingredients

In another bowl, combine the vegetable oil, eggs, and vanilla extract. Mix well.

4. Combine Mixtures

Gradually add the wet ingredients to the dry ingredients, mixing until just combined.

5. Add Carrots and Nuts

Fold in the grated carrots, chopped nuts, and raisins (if using) until evenly distributed.

6. Bake the Cake

Divide the batter evenly between the prepared pans and smooth the tops. Bake for 25-30 minutes, or until a toothpick inserted in the center comes out clean.

7. Cool the Cakes

Allow the cakes to cool in the pans for 10 minutes, then remove from the pans and transfer to a wire rack to cool completely.

8. Frost (Optional)

Once cooled, frost with cream cheese frosting, if desired.
