1. Prepare the Base
In a large pot, heat the cooking oil over medium heat. Add the chopped onion, bell pepper, celery, and garlic. Sauté until the vegetables are soft and the onion is translucent, about 5-7 minutes.
2. Add the Sausage
Stir in the sliced andouille sausage and cook for another 5 minutes until browned.
3. Add Liquids and Seasonings
Pour in the chicken broth and canned diced tomatoes. Add the bay leaves, Cajun seasoning, salt, and black pepper to taste. Bring to a boil.
4. Simmer
Reduce the heat to low, cover, and let simmer for 30 minutes, stirring occasionally.
5. Add Seafood
Stir in the shrimp, crab meat, crawfish, and okra. Cook for an additional 10-15 minutes, or until the seafood is cooked through.
6. Finish and Serve
Remove the bay leaves. Garnish with fresh parsley and green onions before serving. Enjoy your gumbo with rice or crusty bread!
