    Sauté the Vegetables

    In a large pot, heat the olive oil over medium heat. Add the chopped onion, bell pepper, and celery, and sauté for about 5 minutes until the vegetables are soft. Stir in the minced garlic and cook for another minute.

    Add Tomatoes and Stock

    Add the diced tomatoes, seafood stock, and Cajun seasoning to the pot. Stir well to combine.

    Simmer the Mixture

    Add the bay leaves and bring the mixture to a boil. Reduce the heat to low and let it simmer for about 15 minutes.

    Add Okra and Seafood

    Stir in the sliced okra, shrimp, and crab meat. Season with salt and black pepper to taste. Continue to cook for another 10 minutes, until the shrimp are pink and cooked through.

    Finish and Serve

    Remove the bay leaves. Stir in the chopped green onions and serve the gumbo hot, preferably over rice.
