    Prepare the Pork Roast

    Preheat your oven to 325°F (163°C). In a small bowl, mix together the minced garlic, olive oil, salt, black pepper, and paprika. Rub this mixture all over the pork shoulder roast.

    Prepare the Vegetables

    In a large roasting pan, add the chopped onion and sliced carrots. Place the seasoned pork roast on top of the vegetables.

    Add Broth and Roast

    Pour the chicken broth into the roasting pan around the pork. Cover with aluminum foil and roast in the preheated oven for about 3 hours, or until the pork is tender and easily pulls apart.

    Finishing Touches

    Remove the foil for the last 30 minutes of cooking to allow the pork to brown. Check the internal temperature; it should reach at least 145°F (63°C).

    Rest and Serve

    Once done, remove the pork from the oven and let it rest for about 15 minutes before slicing. Serve the pork roast with the cooked red beans.
