    Prepare the Meatballs

    In a large bowl, combine ground beef, bread crumbs, egg, 1 tsp minced garlic, salt, and black pepper. Mix until well combined, then form the mixture into meatballs about 1 inch in diameter.

    Brown the Meatballs

    In a large pot, heat 1 tbsp of olive oil over medium heat. Add the meatballs and brown them on all sides. Remove the meatballs from the pot and set aside.

    Sauté the Vegetables

    In the same pot, add the remaining olive oil. Add chopped onion, diced carrot, and diced celery. Sauté until the vegetables are soft, about 5 minutes. Add the remaining minced garlic and sauté for another minute.

    Combine Ingredients

    Add the crushed tomatoes, beef broth, Italian seasoning, and the browned meatballs back into the pot. Stir everything together and bring to a simmer.

    Cook the Stew

    Cover the pot and let it simmer for about 30 minutes, stirring occasionally.

    Add Corn

    After 30 minutes, add the frozen corn to the stew and cook for an additional 10 minutes.

    Serve

    Taste and adjust seasoning if necessary. Serve the meatball stew hot.
