    Marinate the Chicken

    In a large bowl, combine the buttermilk, salt, black pepper, and cayenne pepper (if using). Add the chicken pieces and ensure they are well coated. Cover and refrigerate for at least 2 hours, preferably overnight.

    Prepare the Coating

    In another bowl, mix together the flour, paprika, garlic powder, onion powder, salt, and black pepper.

    Heat the Oil

    In a large, deep skillet or pot, heat the vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Coat the Chicken

    Remove the chicken pieces from the buttermilk marinade, letting any excess drip off. Dredge the chicken pieces in the flour mixture until fully coated.

    Fry the Chicken

    Carefully place the coated chicken pieces in the hot oil, working in batches to avoid overcrowding. Fry for about 12-15 minutes per side, or until golden brown and the internal temperature reaches 165°F (75°C).

    Drain and Serve

    Remove the fried chicken from the oil and place it on a wire rack or paper towels to drain excess oil. Let it rest for a few minutes before serving.
