    Prepare the Breading

    In a medium bowl, mix together cornmeal, flour, Cajun seasoning, salt, and black pepper.

    Prepare the Wet Mixture

    In another bowl, whisk together buttermilk and eggs until well combined.

    Coat the Catfish

    Dip each catfish fillet first into the wet mixture, allowing excess to drip off, then dredge in the cornmeal mixture until fully coated.

    Heat the Oil

    In a large skillet, heat vegetable oil over medium-high heat until it reaches 350°F (175°C).

    Fry the Catfish

    Carefully add the coated catfish fillets to the hot oil, frying in batches if necessary. Cook for 3-5 minutes on each side until golden brown and cooked through.

    Drain and Serve

    Remove the fried catfish from the oil and drain on paper towels. Serve hot with your choice of dipping sauce.
