    Make the Roux

    In a large saucepan over medium heat, melt the butter. Add the flour and whisk continuously for about 15-20 minutes, until the mixture turns a dark golden brown.

    Add Vegetables

    Stir in the chopped onion, green bell pepper, celery, and minced garlic. Cook for about 5 minutes until the vegetables are soft.

    Combine Ingredients

    Gradually add the chicken broth while stirring constantly to prevent lumps. Add the Cajun seasoning, bay leaves, salt, and black pepper.

    Simmer

    Bring the mixture to a boil, then reduce the heat to low. Add the crawfish tails and let it simmer for 20-25 minutes, stirring occasionally.

    Serve

    Remove bay leaves. Serve the etouffee over cooked rice and garnish with chopped green onions.
