    In a large pot, melt the butter over medium heat. Gradually whisk in the flour to form a roux. Cook, stirring constantly, until the roux is a deep brown color, about 15-20 minutes.

    Sauté the Vegetables

    Add the chopped onion, celery, and bell pepper to the roux. Sauté until the vegetables are tender, about 5-7 minutes. Stir in the minced garlic and cook for another minute.

    Add Broth and Seasoning

    Gradually whisk in the chicken broth, ensuring there are no lumps. Add the tomato paste, cayenne pepper, thyme, bay leaf, salt, and black pepper. Bring the mixture to a boil, then lower the heat and let it simmer for about 30 minutes.

    Incorporate Crawfish and Cream

    Add the crawfish tails and heavy cream to the pot. Stir well and let it simmer for an additional 10 minutes to heat through and blend the flavors.

    Remove the bay leaf and serve the bisque hot, garnished with chopped green onions.
