    In a large pot, heat olive oil over medium-high heat. Add rabbit pieces and sear until browned on all sides, about 5-7 minutes. Remove rabbit from pot and set aside.

    In the same pot, add chopped onion, minced garlic, sliced carrots, and sliced celery. Sauté until vegetables are soft, about 5 minutes.

    Combining Ingredients

    Return the rabbit to the pot. Add diced potatoes, bay leaves, dried thyme, chicken broth, salt, and black pepper. Stir to combine.

    Simmering

    Bring the mixture to a boil, then reduce heat to low. Cover and let it simmer for about 1.5 to 2 hours, or until the rabbit is tender.

    Final Touches

    Remove bay leaves. Taste and adjust seasoning if necessary. Serve hot, garnished with chopped parsley.
