1. Prepare the Wood Chips
Soak the mesquite wood chips in water for at least 30 minutes before grilling to prevent them from burning too quickly.

In a bowl, combine olive oil, garlic powder, onion powder, paprika, salt, black pepper, and lemon juice. Mix well to create a marinade.
3. Marinate the Chicken
Place the chicken thighs in a large resealable bag or bowl. Pour the marinade over the chicken, ensuring each piece is well coated. If using, add fresh herbs. Seal the bag or cover the bowl and marinate in the refrigerator for at least 1 hour, or preferably overnight.
4. Prepare the Grill
Preheat your grill to medium-high heat. If using a charcoal grill, add the soaked mesquite wood chips on top of the coals for smoke.
